An important brewery in Santiago was Gubler & Cousiño, founded in 1883 by the Swiss Augusto Gubler, an expert in the beer industry, and Carlos Cousiño. The company undertook the construction and expansion of a new Providencia plant, located on a 31.5-hectare plot next to the confluence of the San Carlos Canal with the Mapocho River and which was inaugurated with a great party in November 1886. The plant had four different sections: the malt house where it was manufactured from barley and equipped with roasters of the Nolack and Pritze system in Prague; the brewery itself; the refrigeration department, the fermentation cellars and underground tanks, and the ice factory.The latter was equipped with two Raoul Pictet and Charles Tellier system machines capable of producing 15,000 kilos of ice per day and which was planned to be expanded to 35,000. Something similar happened with the malting and cellars whose capacity of four to five million liters per year was half of what the brewery section could produce, which suggests that an expansion of those was contemplated in the future.
